Recipe of the Month:
Here's a decadent chocolate recipe to warm your heart:
Chocolate Espresso Crinkles
1 C. flour
3/4 C. powdered sugar
1/4 C. unsweetened cocoa
1 1/4 tsp. baking powder
1/8 tsp. salt
2 T canola oil
1 1/2 oz. unsweetened chocolate
1 tsp. instant espresso granules
3/4 C. packed brown sugar
3 T. light corn syrup
1 1/2 tsp. vanilla
2 large egg whites
Combine flour, sugar, cocoa, baking powder and salt.
Combine oil and chocolate in small sauce pa. Melt over low heat,. Add espresso granules and mix well. Remove from heat. Coll for five minutes.
When chocolate mixture is cooled, add brown sugar, corn syrup, vanilla and egg whites.
Chill for two hours or overnight. Roll cookie dough into balls and in powdered sugar and bake in pre-heated over for ten minutes.
